Description

Gooey Caramel Pecan Chocolate Snowballs are indulgent no-bake treats featuring chewy Medjool dates, crunchy pecans, and dark chocolate wrapped around a soft caramel center. With a powdered sugar finish, these easy, mess-free bites are perfect for gifting, parties, or satisfying sweet cravings.


Ingredients

  • 2 cups pitted Medjool dates
  • 1 1/2 cups pecans, roughly chopped
  • 1/2 cup dark chocolate chips, divided
  • 1/3 cup soft caramel sauce
  • 1 cup powdered sugar, for rolling

Instructions

  1. Line a baking sheet with parchment paper. Scoop 20 teaspoon-sized dollops of caramel sauce onto the sheet. Freeze for 20 minutes until firm but pliable.
  2. In a food processor, pulse dates for 1 minute until a sticky paste forms.
  3. Add chopped pecans and 1/4 cup chocolate chips. Pulse for 30 seconds until dough-like with visible nut pieces. Stir in remaining 1/4 cup chocolate chips by hand.
  4. Flatten 1 tablespoon of the date mixture into a disc. Place a frozen caramel dollop in the center, then wrap and seal into a smooth ball. Repeat for all snowballs.
  5. Roll each ball in powdered sugar until fully coated.
  6. Refrigerate for 40 minutes to set before serving.

Notes

  • Freeze caramel first to prevent leaking during shaping.
  • If dough is too sticky, add more chopped pecans. If too dry, add a teaspoon of water or an extra date.
  • Add sea salt to caramel for a sweet-salty twist.
  • Use milk chocolate or dairy-free chips as preferred.
