Description

Golden roasted cauliflower tossed with turmeric, garlic, and warm spices, creating a crispy, flavorful side dish that’s vegan, gluten-free, and perfect for weeknights or holiday meals.


Ingredients

  • Cooking spray
  • 6 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon garam masala
  • 1/21 teaspoon kosher salt (to taste)
  • 1 large head or 2 small heads cauliflower, cut into florets (about pounds)

Instructions

  1. Preheat oven to 425°F (220°C) and line one or two baking sheets with aluminum foil. Lightly spray with cooking spray.
  2. In a large mixing bowl, whisk together olive oil, garlic powder, turmeric, garam masala, and salt.
  3. Add cauliflower florets and toss until well coated in the spice mixture.
  4. Spread florets in a single layer on prepared baking sheet(s).
  5. Roast for 10 minutes, stir, rotate pans, and roast another 10 minutes until tender, golden, and caramelized.
