Ingredients
- Cooking spray
- 6 tablespoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon ground turmeric
- 1/2 teaspoon garam masala
- 1/2–1 teaspoon kosher salt (to taste)
- 1 large head or 2 small heads cauliflower, cut into florets (about 2½ pounds)
Instructions
- Preheat oven to 425°F (220°C) and line one or two baking sheets with aluminum foil. Lightly spray with cooking spray.
- In a large mixing bowl, whisk together olive oil, garlic powder, turmeric, garam masala, and salt.
- Add cauliflower florets and toss until well coated in the spice mixture.
- Spread florets in a single layer on prepared baking sheet(s).
- Roast for 10 minutes, stir, rotate pans, and roast another 10 minutes until tender, golden, and caramelized.
- Serve hot and enjoy!

- For spicier flavor, add cayenne pepper or red chili flakes.
