Ingredients

  • 2 pounds beef chuck roast, cut into 1.5-inch cubes
  • 1 tablespoon vegetable oil
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup beef broth (plus more as needed)
  • 1/4 cup brown sugar, packed
  • 2 tablespoons rice vinegar
  • 1 teaspoon red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 4 tablespoons cold water
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Pat beef cubes dry and season with salt and black pepper.
  2. Heat vegetable oil in a large Dutch oven over medium-high heat. Sear beef in batches until browned on all sides. Set aside.
  3. Reduce heat to medium and sauté chopped onion for 5–7 minutes until softened. Add garlic and ginger; cook 1 minute more.
  4. Return seared beef to pot. Add soy sauce, beef broth, brown sugar, rice vinegar, and red pepper flakes (if using). Stir to combine.
  5. Bring to a simmer, then reduce heat to low. Cover and braise for 2–3 hours, checking occasionally to ensure there’s enough liquid.
  6. When beef is fork-tender, uncover the pot. In a small bowl, whisk together cornstarch and cold water to make a slurry.
  7. Slowly pour slurry into the pot, stirring constantly. Simmer for 2–3 minutes until sauce thickens into a glossy glaze.
  8. Serve hot, spooning extra glaze over the beef. Garnish with optional green onions or sesame seeds.
