Description

These soft, fluffy dinner rolls are infused with garlic and fresh herbs, then brushed with rich herb butter for a savory, golden finish. Perfect for holiday meals or cozy dinners, they combine the appeal of homemade bread with the flavors of garlic bread.


Ingredients

  • 6 tablespoons unsalted butter
  • 3 garlic cloves, grated or finely minced
  • 1/3 cup finely chopped fresh herbs (chives, parsley, thyme)
  • 1 cup warm water (110°F to 115°F)
  • 2 tablespoons granulated sugar
  • 2 ¼ teaspoons instant yeast (1 packet)
  • 3 tablespoons garlic & herb butter (from above)
  • ½ cup whole milk or 2% milk, warmed
  • 3 ½ cups all-purpose flour, plus extra for kneading
  • 1 teaspoon kosher salt
  • 1 large egg (for egg wash)
  • Flaky sea salt, for finishing

Instructions

  1. In a small saucepan, melt the butter over low heat. Add garlic and herbs, cooking gently for 1–2 minutes until fragrant. Remove from heat. Reserve 3 tablespoons for the dough; set the rest aside for brushing.
  2. In a large bowl, combine warm water and sugar. Stir to dissolve, add yeast, let sit for 1 minute, then stir again.
  3. Add reserved herb butter and warm milk. Mix to combine.
  4. Gradually add flour, about 1 cup at a time, mixing as you go. Add salt while mixing. Knead dough for 7–8 minutes until soft, smooth, and slightly tacky.
  5. Form into a ball and place in a greased bowl. Cover and let rise for 30–45 minutes until doubled in size.
  6. Punch down dough and transfer to a floured surface. Divide into 15 equal portions and shape into smooth balls.
  7. Arrange in a greased 9×13-inch baking dish in 3 rows of 5. Cover and let rise for another 20–30 minutes until puffy.
  8. Preheat oven to 400°F (200°C). Beat egg with a splash of water for egg wash and brush tops of rolls.
  9. Bake for 20–25 minutes or until golden brown and fully baked.
  10. Remove from oven and immediately brush with remaining garlic herb butter. Sprinkle with flaky sea salt and serve warm.

  • Mix and match herbs like rosemary, sage, or dill for variety.
  • For cheesy rolls, knead in ½ cup grated Parmesan or cheddar.
  • Add red pepper flakes to the butter for a mild kick.
  • Use half whole wheat flour for a heartier version—extend rise time.
