Ingredients
1/2 stick unsalted butter, divided
1 tablespoon olive oil
1 lb baby or Yukon Gold potatoes, halved or cubed
3–4 garlic cloves, minced
1/2 teaspoon dried thyme (or fresh)
1/2 teaspoon dried oregano (or fresh)
Salt and freshly ground black pepper, to taste
1 lb sirloin steak (or another tender cut), cut into bite-size cubes
Optional: chopped fresh parsley, for garnish
Instructions
- Heat a large cast-iron or heavy-duty skillet over medium heat. Add 1 tablespoon olive oil and 2 tablespoons of butter.
- Once melted, add the potatoes, garlic, thyme, oregano, salt, and pepper. Cook, stirring occasionally, until potatoes are golden and fork-tender (about 8–10 minutes).
- Transfer potatoes and any browned bits from the skillet to a plate and set aside.
- Increase heat to medium-high and add remaining butter.
- When butter is melted, add steak cubes in a single layer. Season with salt and pepper. Sear undisturbed for 1–2 minutes, then stir and cook for another 1–2 minutes until browned.
- Return potatoes to the skillet, stir everything together, and adjust seasoning as needed.
- Sprinkle with chopped fresh parsley before serving.
