Description

Ingredients

1/2 stick unsalted butter, divided

1 tablespoon olive oil

1 lb baby or Yukon Gold potatoes, halved or cubed

34 garlic cloves, minced

1/2 teaspoon dried thyme (or fresh)

1/2 teaspoon dried oregano (or fresh)

Salt and freshly ground black pepper, to taste

1 lb sirloin steak (or another tender cut), cut into bite-size cubes

Optional: chopped fresh parsley, for garnish


Instructions

  1. Heat a large cast-iron or heavy-duty skillet over medium heat. Add 1 tablespoon olive oil and 2 tablespoons of butter.
  2. Once melted, add the potatoes, garlic, thyme, oregano, salt, and pepper. Cook, stirring occasionally, until potatoes are golden and fork-tender (about 8–10 minutes).
  3. Transfer potatoes and any browned bits from the skillet to a plate and set aside.
  4. Increase heat to medium-high and add remaining butter.
  5. When butter is melted, add steak cubes in a single layer. Season with salt and pepper. Sear undisturbed for 1–2 minutes, then stir and cook for another 1–2 minutes until browned.
  6. Return potatoes to the skillet, stir everything together, and adjust seasoning as needed.
  7. Sprinkle with chopped fresh parsley before serving.
