Description

Garlic butter steak bites served over creamy red skinned mashed potatoes with sautéed broccolini make for a hearty, restaurant-quality meal that’s rich, flavorful, and ready in under an hour.


Ingredients

  • 1 ½ pounds sirloin steak, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 2 pounds red skinned potatoes, scrubbed and cut into chunks
  • 1 tablespoon salt (for boiling water)
  • 4 tablespoons unsalted butter (for mashed potatoes)
  • ¾ cup warm milk
  • 1 teaspoon salt (for mashed potatoes)
  • ½ teaspoon black pepper (for mashed potatoes)
  • 1 pound broccolini, trimmed
  • 1 tablespoon olive oil (for broccolini)
  • 2 cloves garlic, minced (for broccolini)
  • ½ teaspoon salt (for broccolini)
  • ¼ teaspoon black pepper (for broccolini)

Instructions

  1. Place red skinned potatoes in a large pot, cover with cold water, and add 1 tablespoon of salt. Bring to a boil and cook for 15–18 minutes until fork-tender. Drain well.
  2. Mash the hot potatoes with butter and warm milk until smooth and creamy. Season with salt and black pepper. Cover and keep warm.
  3. Season steak bites with salt, black pepper, and paprika.
  4. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add steak bites in a single layer and cook for 2–3 minutes per side until browned and cooked to desired doneness. Remove from skillet and set aside.
  5. Lower heat to medium. In the same skillet, add 4 tablespoons butter and minced garlic. Cook for 30 seconds until fragrant.
  6. Return steak bites to the skillet and toss in garlic butter. Sprinkle with chopped parsley and remove from heat.
  7. Heat 1 tablespoon olive oil in a separate skillet over medium heat. Add garlic and cook for 30 seconds. Add broccolini, season with salt and pepper, and sauté for 4–6 minutes until tender-crisp.
  8. Serve steak bites over mashed potatoes with broccolini on the side.
