Description
Garlic butter steak bites served over creamy red skinned mashed potatoes with sautéed broccolini make for a hearty, restaurant-quality meal that’s rich, flavorful, and ready in under an hour.
Ingredients
- 1 ½ pounds sirloin steak, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 4 tablespoons unsalted butter
- 5 cloves garlic, minced
- 2 tablespoons fresh parsley, finely chopped
- 2 pounds red skinned potatoes, scrubbed and cut into chunks
- 1 tablespoon salt (for boiling water)
- 4 tablespoons unsalted butter (for mashed potatoes)
- ¾ cup warm milk
- 1 teaspoon salt (for mashed potatoes)
- ½ teaspoon black pepper (for mashed potatoes)
- 1 pound broccolini, trimmed
- 1 tablespoon olive oil (for broccolini)
- 2 cloves garlic, minced (for broccolini)
- ½ teaspoon salt (for broccolini)
- ¼ teaspoon black pepper (for broccolini)
Instructions
- Place red skinned potatoes in a large pot, cover with cold water, and add 1 tablespoon of salt. Bring to a boil and cook for 15–18 minutes until fork-tender. Drain well.
- Mash the hot potatoes with butter and warm milk until smooth and creamy. Season with salt and black pepper. Cover and keep warm.
- Season steak bites with salt, black pepper, and paprika.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add steak bites in a single layer and cook for 2–3 minutes per side until browned and cooked to desired doneness. Remove from skillet and set aside.
- Lower heat to medium. In the same skillet, add 4 tablespoons butter and minced garlic. Cook for 30 seconds until fragrant.
- Return steak bites to the skillet and toss in garlic butter. Sprinkle with chopped parsley and remove from heat.
- Heat 1 tablespoon olive oil in a separate skillet over medium heat. Add garlic and cook for 30 seconds. Add broccolini, season with salt and pepper, and sauté for 4–6 minutes until tender-crisp.
- Serve steak bites over mashed potatoes with broccolini on the side.
