Description

Tender grilled lamb chops marinated with garlic, rosemary, lemon zest, and olive oil. This quick and elegant dish is bursting with flavor and perfect for both casual dinners and special occasions.


Ingredients

  • 2 pounds lamb loin or rib chops, thick cut
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 1/4 tsp kosher salt
  • 1/2 tsp ground black pepper
  • Zest of 1 lemon
  • 1/4 cup olive oil

Instructions

  1. In a small bowl or measuring cup, mix together the garlic, rosemary, salt, pepper, lemon zest, and olive oil.
  2. Place lamb chops in a shallow dish or zip-top bag and pour the marinade over them. Flip to coat evenly.
  3. Cover and refrigerate for at least 1 hour or up to overnight.
  4. Preheat grill to medium-high heat. Remove chops from marinade and let sit at room temperature while the grill heats.
  5. Grill lamb chops for 3–5 minutes per side (7–10 minutes total) until internal temperature reaches 135°F for medium.
  6. Transfer to a plate, cover loosely with foil, and rest for 5 minutes before serving.

Notes

  • Add Dijon mustard to the marinade for extra tang.
  • Substitute lemon zest with orange zest or a splash of red wine for variation.
  • Fresh thyme or oregano can replace rosemary.
  • Grill over charcoal or use a smoker with applewood chips for a smoky twist.
  • To pan-sear, use a cast iron skillet over medium-high heat and cook as directed.
