Ingredients
- 1 cup white cake mix
- ½ cup unsalted butter
- 20 oz mini marshmallows
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- 7 cups crispy rice cereal
- 2 cups mini marshmallows (additional)
- ⅓ cup rainbow sprinkles
Instructions
- Prepare a 9×13-inch baking pan with nonstick spray and parchment paper.
- Heat-treat cake mix in microwave-safe bowl until it reaches 160°F (about 1 to 1½ minutes), stirring every 30 seconds. Sift and cool.
- In a large saucepan over medium-low heat, melt butter. Add 20 oz mini marshmallows and stir until melted and smooth. Remove from heat.
- Stir in cake mix, vanilla extract, and salt until fully combined.
- Gently fold in crispy rice cereal and additional 2 cups of mini marshmallows until coated.
- Transfer mixture to prepared pan. Lightly dampen hands and press into an even layer without compacting too firmly.
- Sprinkle rainbow sprinkles on top. Let set at room temperature for 1 hour.
- Lift out using parchment, cut into squares, and serve.
