Description

Ingredients

  • 1 cup white cake mix
  • ½ cup unsalted butter
  • 20 oz mini marshmallows
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 7 cups crispy rice cereal
  • 2 cups mini marshmallows (additional)
  • ⅓ cup rainbow sprinkles

Instructions

  1. Prepare a 9×13-inch baking pan with nonstick spray and parchment paper.
  2. Heat-treat cake mix in microwave-safe bowl until it reaches 160°F (about 1 to 1½ minutes), stirring every 30 seconds. Sift and cool.
  3. In a large saucepan over medium-low heat, melt butter. Add 20 oz mini marshmallows and stir until melted and smooth. Remove from heat.
  4. Stir in cake mix, vanilla extract, and salt until fully combined.
  5. Gently fold in crispy rice cereal and additional 2 cups of mini marshmallows until coated.
  6. Transfer mixture to prepared pan. Lightly dampen hands and press into an even layer without compacting too firmly.
  7. Sprinkle rainbow sprinkles on top. Let set at room temperature for 1 hour.
  8. Lift out using parchment, cut into squares, and serve.
