Description
This Frozen Grape & Watermelon Salad is a refreshing summer dish made with juicy watermelon, icy-sweet frozen grapes, fresh mint, and a citrusy honey-lime dressing. It’s light, naturally sweet, and perfect as a healthy snack, side, or dessert.
Ingredients
- 2 cups seedless grapes (red or green)
- 4 cups watermelon, cubed and seeded
- 1 tablespoon fresh mint, finely chopped
- 1 tablespoon freshly squeezed lime juice
- 1 tablespoon honey (optional)
- 1 pinch salt
Instructions
- Wash and thoroughly dry the grapes.
- Spread grapes in a single layer on a baking sheet and freeze for 2 hours or until completely frozen.
- Cut the watermelon into bite-sized cubes and place in a large bowl.
- Once grapes are frozen, add them to the bowl with watermelon.
- In a small bowl, whisk together lime juice, honey (if using), and a pinch of salt.
- Pour the dressing over the fruit and toss gently to coat evenly.
- Sprinkle chopped mint on top and toss lightly again.
- Serve immediately for best texture or chill briefly before serving.
Notes
- Add chopped almonds or walnuts for crunch just before serving.
- Swap lime juice with lemon juice for a different citrus note.
- A pinch of chili powder adds a sweet-spicy twist.
- Mix in fresh berries for more color and flavor.
- Best served fresh—grapes soften as they thaw.
