Description

This Frozen Grape & Watermelon Salad is a refreshing summer dish made with juicy watermelon, icy-sweet frozen grapes, fresh mint, and a citrusy honey-lime dressing. It’s light, naturally sweet, and perfect as a healthy snack, side, or dessert.


Ingredients

  • 2 cups seedless grapes (red or green)
  • 4 cups watermelon, cubed and seeded
  • 1 tablespoon fresh mint, finely chopped
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon honey (optional)
  • 1 pinch salt

Instructions

  1. Wash and thoroughly dry the grapes.
  2. Spread grapes in a single layer on a baking sheet and freeze for 2 hours or until completely frozen.
  3. Cut the watermelon into bite-sized cubes and place in a large bowl.
  4. Once grapes are frozen, add them to the bowl with watermelon.
  5. In a small bowl, whisk together lime juice, honey (if using), and a pinch of salt.
  6. Pour the dressing over the fruit and toss gently to coat evenly.
  7. Sprinkle chopped mint on top and toss lightly again.
  8. Serve immediately for best texture or chill briefly before serving.
