Description

This fluffy cottage cheese cloud bread is a low-carb, gluten-free, and high-protein alternative to traditional bread. Light and airy with a creamy flavor, it’s perfect for sandwiches, snacks, or toasts—and incredibly easy to make with just a few ingredients.


Ingredients

  • 3 large eggs, separated (≈165 g total)
  • 1 cup (225 g) cottage cheese
  • 1 tsp (4 g) baking powder
  • ½ tsp (2 g) cream of tartar (optional)
  • Pinch of salt

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the eggs, placing yolks in one bowl and whites in another.
  3. Add cream of tartar to the egg whites and beat until stiff peaks form.
  4. In another bowl, blend yolks, cottage cheese, baking powder, and salt until smooth.
  5. Gently fold whipped egg whites into the cottage cheese mixture without deflating them.
  6. Spoon 6 equal rounds of batter onto the baking sheet and shape as desired.
  7. Bake for 25–30 minutes, until golden and set.
  8. Cool on a wire rack before serving.
