Description

These feta-spinach puff pastry bites are flaky, golden appetizers filled with a creamy mixture of spinach, feta, Parmesan, and garlic. Perfect for parties, brunch, or snacking, they’re quick to prepare, vegetarian-friendly, and crowd-pleasing with their savory Mediterranean flavors.


Ingredients

  • Nonstick cooking spray
  • 1 sheet frozen puff pastry (910 inches square), thawed
  • ¾ cup mayonnaise
  • 6 oz crumbled feta cheese
  • ½ cup freshly grated Parmesan cheese
  • 1 package (10 oz) frozen chopped spinach, thawed and drained
  • 2 cloves garlic, minced
  • ¼ tsp ground black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Lightly spray a 24-cup mini muffin tin with nonstick spray.
  2. On a floured surface, roll puff pastry into a 10×10-inch square. Cut into 24 equal squares.
  3. Press each pastry square into a muffin cup and prick bottoms with a fork.
  4. In a bowl, mix mayonnaise, feta, Parmesan, spinach, garlic, and pepper until combined.
  5. Spoon about 1 Tbsp filling into each pastry cup.
  6. Bake for 15–16 minutes until pastry is golden and puffed and filling is set.
  7. Cool 5 minutes in the pan before removing. Serve warm or at room temperature.

Notes

  • Drain spinach thoroughly to avoid watery filling.
  • Replace mayonnaise with Greek yogurt or sour cream for a lighter version.
  • Make ahead by assembling and refrigerating before baking.
  • Freeze baked bites and reheat at 350°F for 8–10 minutes.
