Ingredients
- Nonstick cooking spray
- 1 sheet frozen puff pastry (9–10 inches square), thawed
- ¾ cup mayonnaise
- 6 oz crumbled feta cheese
- ½ cup freshly grated Parmesan cheese
- 1 package (10 oz) frozen chopped spinach, thawed and drained
- 2 cloves garlic, minced
- ¼ tsp ground black pepper
Instructions
- Preheat oven to 375°F (190°C). Lightly spray a 24-cup mini muffin tin with nonstick spray.
- On a floured surface, roll puff pastry into a 10×10-inch square. Cut into 24 equal squares.
- Press each pastry square into a muffin cup and prick bottoms with a fork.
- In a bowl, mix mayonnaise, feta, Parmesan, spinach, garlic, and pepper until combined.
- Spoon about 1 Tbsp filling into each pastry cup.
- Bake for 15–16 minutes until pastry is golden and puffed and filling is set.
- Cool 5 minutes in the pan before removing. Serve warm or at room temperature.
Notes
- Drain spinach thoroughly to avoid watery filling.
- Replace mayonnaise with Greek yogurt or sour cream for a lighter version.
- Make ahead by assembling and refrigerating before baking.
- Freeze baked bites and reheat at 350°F for 8–10 minutes.
- Avoid microwaving, as it softens the pastry.
