Ingredients
- 1 cup all-purpose flour
- 2 tablespoons milk powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup yogurt
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/4 cup oil
- 1/2 cup milk
- 1 cup heavy whipping cream
- 1/4 teaspoon cream of tartar
- 1/2 cup powdered sugar
- 1 cup mascarpone cheese
- 2 tablespoons coffee liqueur (optional)
- 1 cup lukewarm water
- 2 teaspoons instant coffee powder
- 2 tablespoons granulated sugar
- 1/2 teaspoon vanilla extract
- Whipped cream (for topping)
- Unsweetened cocoa powder (for dusting)
Instructions
- Preheat oven to 350°F (175°C). Grease and line a baking sheet.
- Sift together flour, milk powder, baking powder, baking soda, and salt.
- In another bowl, whisk sugar and oil until combined. Add yogurt and vanilla. Alternate adding dry mixture with milk until just combined.
- Spread batter on the prepared baking sheet and bake ~14 minutes, or until a toothpick comes out clean. Let cool, then cut into rounds for cups.
- Chill a mixing bowl and beaters for 10 minutes. Whip cream, powdered sugar, and cream of tartar until stiff peaks form.
- In another bowl, beat mascarpone with powdered sugar and coffee liqueur until smooth. Fold in whipped cream gently.
- Prepare soak: whisk water, instant coffee, sugar, and vanilla until dissolved.
- Dip each cake round quickly into espresso soak.
- Assemble cups: layer dipped cake → mascarpone cream → dipped cake → mascarpone cream, repeating for ~3 layers.
- Top with whipped cream and dust with cocoa powder.
- Chill at least 4–6 hours or overnight before serving.
Notes
- Do not over-soak cake pieces or they will fall apart.
- Assembled cups taste best after chilling overnight.
- Substitute ladyfingers or store-bought cake for convenience.
- Omit coffee liqueur for a kid-friendly version.
- Best consumed within 2 days.
