Description

These easy no-bake coconut date balls are naturally sweetened, vegan, and ready in just 10 minutes—perfect for a quick snack or healthy treat.


Ingredients

  • 10 medjool dates
  • ½ cup desiccated coconut, plus extra for rolling
  • 2 tablespoons cocoa powder
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • 1 pinch sea salt
  • 1 tablespoon water (adjust as needed)

Instructions

  1. Place all ingredients except the water into a food processor.
  2. Blend until the dates are finely chopped and the mixture begins to come together.
  3. Add about 1 tablespoon of water and pulse again until the mixture holds when pressed into a ball. Add more water if necessary.
  4. Shape the mixture into tablespoon-sized balls.
  5. Roll each ball in extra desiccated coconut to coat.
  6. Store in the refrigerator until ready to enjoy.

Notes

  • Use raw cacao instead of cocoa powder for a richer flavor.
  • Soak dates in hot water if they are dry or firm.
