Ingredients
- 10 medjool dates
- ½ cup desiccated coconut, plus extra for rolling
- 2 tablespoons cocoa powder
- ½ teaspoon vanilla extract
- ¼ teaspoon cinnamon
- 1 pinch sea salt
- 1 tablespoon water (adjust as needed)
Instructions
- Place all ingredients except the water into a food processor.
- Blend until the dates are finely chopped and the mixture begins to come together.
- Add about 1 tablespoon of water and pulse again until the mixture holds when pressed into a ball. Add more water if necessary.
- Shape the mixture into tablespoon-sized balls.
- Roll each ball in extra desiccated coconut to coat.
- Store in the refrigerator until ready to enjoy.
Notes
- Use raw cacao instead of cocoa powder for a richer flavor.
- Soak dates in hot water if they are dry or firm.
- Add chopped nuts or extra coconut inside the mixture for texture.
