Description

Colorful grilled vegetable skewers featuring zucchini, red onion, and bell peppers, brushed with a fragrant garlic herb sauce and finished with tangy balsamic vinegar. A healthy, vibrant side perfect for summer cookouts.


Ingredients

1 large red onion, peeled and cut into wedges

1 large zucchini, sliced into 1/2-inch rounds

1 red bell pepper, seeded and cut into 1-inch pieces

1 orange bell pepper, seeded and cut into 1-inch pieces

1 yellow bell pepper, seeded and cut into 1-inch pieces

1 green bell pepper, seeded and cut into 1-inch pieces

2 tbsp olive oil, for brushing

2 tbsp balsamic vinegar, for serving

3 tbsp olive oil (for garlic herb sauce)

2 garlic cloves, minced

2 tbsp fresh parsley, minced

1 tbsp fresh cilantro, minced

1 tsp fresh rosemary, minced

Salt, to taste

Freshly ground black pepper, to taste


Instructions

  1. Soak wooden skewers in water for 15–30 minutes to prevent burning.
  2. Prepare vegetables: peel and cut onion into wedges, seed and chop bell peppers into 1-inch pieces, and slice zucchini into 1/2-inch rounds.
  3. In a medium bowl, whisk together olive oil, garlic, parsley, cilantro, rosemary, salt, and pepper to make the garlic herb sauce.
  4. Thread vegetables onto skewers, alternating colors and types for even cooking.
  5. Brush skewers lightly with olive oil.
  6. Preheat grill to medium-high heat. Grill skewers for 5–8 minutes per side, until slightly charred and tender.
  7. Remove from grill, brush with garlic herb sauce, and drizzle with balsamic vinegar before serving.

Notes

  • Soak wooden skewers to avoid burning during grilling.
  • For variety, add mushrooms, cherry tomatoes (on separate skewers), or eggplant.
  • Bake at 425°F for 15–20 minutes as an alternative to grilling.
  • Store leftovers in the fridge for up to 3 days and reheat gently.
  • Balsamic vinegar is optional but adds a nice tangy balance.
