Ingredients
- 16 oz rotini pasta (or other medium pasta)
- 3/4 English cucumber, diced
- 1 pint grape tomatoes, halved
- 1 red or orange bell pepper, diced
- 1/2 cup sliced pitted olives
- 1/2 cup crumbled feta cheese
- 1/3 cup diced red onion
- 1 cup Greek dressing or:
- 1/4 cup red wine vinegar
- 1/3 cup olive oil
- 1/2 tsp garlic powder
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together the dressing ingredients if making from scratch.
- Cook pasta al dente according to package instructions. Drain and rinse under cold water to cool.
- While pasta cools, chop cucumber, tomatoes, bell pepper, and red onion.
- In a large bowl, combine cooked pasta, vegetables, olives, and feta.
- Pour dressing over the salad and toss until evenly coated.
- Chill in the refrigerator for at least 2 hours before serving.
