Description

This Easy Greek Pasta Salad is a fresh and colorful side dish made with rotini, crisp vegetables, briny olives, feta cheese, and a tangy Greek dressing. It’s perfect for potlucks, meal prep, or quick lunches, and comes together in under 20 minutes with minimal effort.


Ingredients

  • 16 oz rotini pasta (or other medium pasta)
  • 3/4 English cucumber, diced
  • 1 pint grape tomatoes, halved
  • 1 red or orange bell pepper, diced
  • 1/2 cup sliced pitted olives
  • 1/2 cup crumbled feta cheese
  • 1/3 cup diced red onion
  • 1 cup Greek dressing or:
  • 1/4 cup red wine vinegar
  • 1/3 cup olive oil
  • 1/2 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the dressing ingredients if making from scratch.
  2. Cook pasta al dente according to package instructions. Drain and rinse under cold water to cool.
  3. While pasta cools, chop cucumber, tomatoes, bell pepper, and red onion.
  4. In a large bowl, combine cooked pasta, vegetables, olives, and feta.
  5. Pour dressing over the salad and toss until evenly coated.
  6. Chill in the refrigerator for at least 2 hours before serving.
