Description

Easy Chicken Alfredo Pasta is a creamy, comforting dish made with juicy pan-seared chicken, homemade Alfredo sauce, and tender pasta. It’s elegant enough for guests yet simple enough for a quick weeknight dinner, all ready in 35 minutes.


Ingredients

2 tbsp olive oil

500 g (1 lb) chicken breasts

1 tbsp Italian herbs or Italian seasoning

1 tsp garlic powder

1 tsp salt

½ tsp black pepper

3 tbsp butter

2 garlic cloves, minced or crushed

2 cups heavy or whipping cream

1 tsp dried Italian herbs or seasoning

1½ cups finely grated Parmesan cheese

Salt and pepper, to taste

500 g (1 lb) fettuccine or any pasta of your choice

Parmesan and chopped parsley, to serve


Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente (9–12 minutes). Reserve 1/2 cup of pasta water, then drain.
  2. Slice chicken breasts in half horizontally to create thin cutlets. Drizzle with olive oil and season both sides with Italian seasoning, garlic powder, salt, and pepper.
  3. In a large skillet over medium-high heat, sear chicken for 2–3 minutes per side until golden and cooked through. Remove and set aside.
  4. In the same pan, melt butter and add garlic. Cook for 30 seconds until fragrant.
  5. Pour in cream and dried herbs. Simmer for 2–3 minutes until slightly reduced.
  6. Remove from heat and stir in Parmesan until melted and smooth. Season with salt and pepper to taste.
  7. Slice cooked chicken into strips. Add to the sauce along with the drained pasta and a few tablespoons of reserved pasta water.
  8. Toss everything together until well coated. Serve with extra Parmesan and chopped parsley.

  • Use boneless chicken thighs for a juicier version.
  • Swap cream with Greek yogurt for a lighter option.
  • Add mushrooms or broccoli for extra veggies.
  • A pinch of red pepper flakes adds a subtle kick.
