Ingredients

  • 1 pound ground beef (85/15)
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced (about ½ cup)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 68 large flour tortillas, burrito-size
  • 2 cups shredded sharp cheddar cheese
  • 3 cups finely shredded iceberg lettuce
  • ½ cup dill pickle slices, patted dry
  • For the homemade special sauce:
    • ½ cup mayonnaise
    • 2 tablespoons dill pickle relish, drained
    • 1 tablespoon yellow mustard
    • 1 teaspoon white vinegar
    • ½ teaspoon paprika
    • ¼ teaspoon garlic powder
    • ¼ teaspoon onion powder

Instructions

  1. Prepare the special sauce by combining mayonnaise, pickle relish, mustard, vinegar, paprika, garlic powder, and onion powder in a bowl. Whisk until smooth and refrigerate.
  2. Heat olive oil in a large skillet over medium heat. Sauté diced onion for 3–4 minutes until softened and translucent.
  3. Add ground beef, season with salt and black pepper, and cook 8–10 minutes, breaking meat into small pieces until browned. Drain excess fat and let cool slightly.
  4. Warm flour tortillas until flexible.
  5. Spread a generous layer of special sauce on each tortilla, leaving a small border around edges.
  6. Top with cooked beef, shredded lettuce, shredded cheddar, and pickle slices.
  7. Fold sides inward and roll from the bottom to form a tight wrap. Repeat with remaining tortillas.
