Ingredients
- 1 pound ground beef (85/15)
- 1 tablespoon olive oil
- 1 small yellow onion, finely diced (about ½ cup)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 6–8 large flour tortillas, burrito-size
- 2 cups shredded sharp cheddar cheese
- 3 cups finely shredded iceberg lettuce
- ½ cup dill pickle slices, patted dry
- For the homemade special sauce:
- ½ cup mayonnaise
- 2 tablespoons dill pickle relish, drained
- 1 tablespoon yellow mustard
- 1 teaspoon white vinegar
- ½ teaspoon paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
Instructions
- Prepare the special sauce by combining mayonnaise, pickle relish, mustard, vinegar, paprika, garlic powder, and onion powder in a bowl. Whisk until smooth and refrigerate.
- Heat olive oil in a large skillet over medium heat. Sauté diced onion for 3–4 minutes until softened and translucent.
- Add ground beef, season with salt and black pepper, and cook 8–10 minutes, breaking meat into small pieces until browned. Drain excess fat and let cool slightly.
- Warm flour tortillas until flexible.
- Spread a generous layer of special sauce on each tortilla, leaving a small border around edges.
- Top with cooked beef, shredded lettuce, shredded cheddar, and pickle slices.
- Fold sides inward and roll from the bottom to form a tight wrap. Repeat with remaining tortillas.
- Serve immediately, whole or sliced in half.
