Description

A light and creamy no-bake dessert featuring crushed pineapple, canned fruit, fruit mini marshmallows, and cheesecake pudding, topped with festive Peep Rabbits. Perfect for spring gatherings and Easter celebrations!

Ingredients

  • 8 oz Cool Whip, thawed
  • 1¼ cups instant cheesecake pudding, prepared
  • 1½ cups crushed pineapple, well-drained
  • 1 cup canned mandarins, drained
  • 1 cup diced pears
  • 1 cup diced peaches
  • 10 oz fruit mini marshmallows
  • Peep Rabbits, for topping

Instructions

  1. Combine base: In a large bowl, mix the Cool Whip and prepared cheesecake pudding until smooth.
  2. Add pineapple: Fold in the crushed pineapple until evenly incorporated.
  3. Add fruit: Gently fold in the mandarins, pears, and peaches. Mix carefully to keep the fruit intact.
  4. Add marshmallows: Stir in the fruit mini marshmallows.
  5. Chill: Cover and refrigerate for at least 2 hours.
  6. Serve: Spoon into bowls or cups and top with Peep Rabbits for a festive finish.

Notes

  • Use well-drained fruit to avoid a watery consistency.
  • Can be made a day in advance—chilling overnight enhances flavor.
  • Homemade whipped cream can be used instead of Cool Whip if desired.
