Ingredients

  • 1 can (13.5 ounces / 400 ml) full-fat coconut milk
  • 1/3 cup granulated sugar
  • 1 cup frozen dragon fruit (pitaya) chunks

Instructions

  1. Add coconut milk, sugar, and frozen dragon fruit chunks to a high-speed blender.
  2. Blend until completely smooth and evenly colored, with no visible fruit pieces.
  3. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually 20–25 minutes until soft-serve consistency.
  4. Transfer to a freezer-safe container and smooth the top with a spatula.
  5. Freeze for 1 to 2 hours, or until firm enough to scoop.
