Description
This Dragon Fruit Coconut Milk Ice Cream is a vibrant, dairy-free frozen treat made with just three simple ingredients. Naturally pink and beautifully creamy, it’s the perfect refreshing dessert for warm days or whenever you crave something fruity and fun.
Ingredients
- 1 can (13.5 ounces / 400 ml) full-fat coconut milk
- 1/3 cup granulated sugar
- 1 cup frozen dragon fruit (pitaya) chunks
Instructions
- Add coconut milk, sugar, and frozen dragon fruit chunks to a high-speed blender.
- Blend until completely smooth and evenly colored, with no visible fruit pieces.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually 20–25 minutes until soft-serve consistency.
- Transfer to a freezer-safe container and smooth the top with a spatula.
- Freeze for 1 to 2 hours, or until firm enough to scoop.
- If too firm when serving, let sit at room temperature for 5–10 minutes before scooping.
Notes
- Substitute sugar with honey or maple syrup for a natural sweetener option.
- Add 1 tablespoon coconut cream for extra richness.
- Increase dragon fruit to 1½ cups for a bolder fruit flavor.
- Add a splash of vanilla extract for added depth.
- To prevent ice crystals, press parchment paper against the surface before sealing.
