Ingredients
- 1 lb lean ground turkey or lean ground chicken (93–99% lean)
- 1½ cups mushrooms, sliced
- ½ small onion, finely diced (optional)
- ¾ cup no-sugar-added marinara sauce
- ¾ cup part-skim shredded mozzarella cheese
- ¼ cup reduced-fat shredded cheddar cheese (optional)
- 1½ cups fresh spinach or zucchini, chopped
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat oven to 400°F (205°C).
- In a large skillet over medium heat, cook ground turkey or chicken, breaking it apart, until browned.
- Add diced onion (if using), mushrooms, and spinach or zucchini. Cook for 4–6 minutes until softened and moisture is reduced.
- Stir in Italian seasoning, garlic powder, salt, and pepper.
- Add marinara sauce and simmer for 2–3 minutes to combine.
- Divide mixture evenly among four oven-safe bowls or ramekins.
- Top each with mozzarella and cheddar cheese (if using).
- Bake for 12–15 minutes until cheese is melted and golden.
- Let cool slightly before serving.
