Ingredients
- 2 lbs chicken drumsticks
- 1/2 cup Dijon mustard
- 1/4 cup pure maple syrup
- 1 tablespoon apple cider vinegar
- 1/2 cup low sodium chicken broth or homemade chicken stock
- 1 teaspoon sea salt, or to taste
- 1/2 teaspoon fresh ground black pepper, or to taste
- Optional: cooked brown rice, for serving
Instructions
- In a medium mixing bowl, whisk together the Dijon mustard, maple syrup, and apple cider vinegar until well combined.
- Pat the chicken drumsticks dry and season with sea salt and black pepper.
- Place the drumsticks in a single layer in the slow cooker.
- Pour the maple mustard sauce over the chicken, turning to coat evenly.
- Add the chicken broth to the slow cooker.
- Cover and cook on low for 6–8 hours or high for 3–4 hours, until chicken is very tender and fully cooked.
- Optional: Transfer the sauce to a blender and blend until smooth for serving.
- Serve warm with sauce spooned over the top. Pair with brown rice or vegetables if desired.
Notes
- Add garlic powder, onion powder, or chili flakes for extra flavor.
- Use chicken thighs instead of drumsticks if preferred.
- To thicken sauce without blending, remove the lid for the last 30 minutes of cooking.
- Blending the sauce is optional—it will still be flavorful if left as-is.
- This recipe doubles well for larger meals or meal prep.
