Description

Crunchy, golden shrimp bombs stuffed with melty mozzarella and seasoned with garlic, herbs, and Parmesan. Perfect as a party appetizer or weekend treat, these bites deliver restaurant-style flavor at home.

Ingredients

  • 1 lb large shrimp, peeled, deveined, and butterflied
  • 6 oz mozzarella cheese, cut into 24 small cubes
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp Italian seasoning
  • ¾ tsp salt
  • ½ tsp black pepper
  • 2 cups neutral frying oil (vegetable or sunflower)
  • 2 tbsp fresh chives or parsley, finely chopped, for garnish

Instructions

  1. Place a cube of mozzarella inside each butterflied shrimp and press to close.
  2. Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of panko, Parmesan, garlic powder, paprika, Italian seasoning, salt, and pepper.
  3. Dredge each shrimp in flour, then dip in eggs, and coat thoroughly in the breadcrumb mixture.
  4. For frying: Heat oil to 350°F (175°C) in a deep skillet. Fry shrimp in batches for 2–3 minutes per side until golden. Drain on paper towels.
  5. For air frying: Preheat air fryer to 400°F (200°C). Spray shrimp with oil and cook for 8–10 minutes, turning halfway.
  6. Garnish with chopped chives or parsley and serve hot.

Notes

  • Ensure shrimp are tightly wrapped around cheese to prevent leaking during cooking.
  • Add chili powder for a spicy kick, or lemon zest for a citrus note.
  • Use gluten-free flour and breadcrumbs for a gluten-free version.
  • Best served fresh, but can be reheated in oven or air fryer.
