Crunchy, golden shrimp bombs stuffed with melty mozzarella and seasoned with garlic, herbs, and Parmesan. Perfect as a party appetizer or weekend treat, these bites deliver restaurant-style flavor at home.
Ingredients
- 1 lb large shrimp, peeled, deveined, and butterflied
- 6 oz mozzarella cheese, cut into 24 small cubes
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- ½ tsp paprika
- ½ tsp Italian seasoning
- ¾ tsp salt
- ½ tsp black pepper
- 2 cups neutral frying oil (vegetable or sunflower)
- 2 tbsp fresh chives or parsley, finely chopped, for garnish
Instructions
- Place a cube of mozzarella inside each butterflied shrimp and press to close.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of panko, Parmesan, garlic powder, paprika, Italian seasoning, salt, and pepper.
- Dredge each shrimp in flour, then dip in eggs, and coat thoroughly in the breadcrumb mixture.
- For frying: Heat oil to 350°F (175°C) in a deep skillet. Fry shrimp in batches for 2–3 minutes per side until golden. Drain on paper towels.
- For air frying: Preheat air fryer to 400°F (200°C). Spray shrimp with oil and cook for 8–10 minutes, turning halfway.
- Garnish with chopped chives or parsley and serve hot.

- Ensure shrimp are tightly wrapped around cheese to prevent leaking during cooking.
- Add chili powder for a spicy kick, or lemon zest for a citrus note.
