Description

Golden, crispy baked potato wedges seasoned with paprika, garlic, and Parmesan, perfect as a side dish, snack, or party appetizer—crispy on the outside, fluffy inside, and bursting with flavor.


Ingredients

4 large russet potatoes

3 tbsp extra virgin olive oil

1 tsp fine sea salt or kosher salt

1 tsp paprika

½ tsp black pepper

1 tsp garlic powder

2 tbsp fresh parsley, finely chopped

¼ cup grated Parmesan cheese


Instructions

  1. Preheat oven to 450°F (232°C) and line a rimmed baking sheet with parchment paper or foil.
  2. Cut potatoes lengthwise in half, then slice each half into 4–5 wedges about ½ inch thick.
  3. Place wedges in a large bowl of cold water with ice cubes for 30 minutes. Drain and pat dry thoroughly.
  4. In a large bowl, toss wedges with salt, paprika, pepper, and garlic powder. Drizzle with olive oil and mix until evenly coated.
  5. Arrange wedges cut-side down in a single layer on the baking sheet.
  6. Bake for 20 minutes, flip, then bake another 12–15 minutes until golden and crispy.
  7. While hot, toss with Parmesan cheese and parsley. Serve immediately with your favorite dip.

Notes

  • For spicy wedges, add cayenne pepper or chili powder to the seasoning.
  • For herbed wedges, toss with rosemary, thyme, or Italian seasoning before baking.
  • Swap Parmesan for shredded cheddar for a richer flavor.
  • Try sweet potatoes for a slightly shorter bake time.
