Description

Creamy Tuscan Chicken features golden-seared chicken breasts simmered in a rich, velvety sauce with parmesan, garlic, sun-dried tomatoes, spinach, and onion. It’s an easy, comforting, Italian-inspired dish perfect for weeknights or entertaining.


Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 tsp Italian seasoning
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 3 tbsp olive oil (or oil from sun-dried tomato jar)
  • 4 garlic cloves, minced
  • 1/4 cup finely chopped yellow onion
  • 1/2 cup sun-dried tomatoes, thinly sliced
  • 2 cups baby spinach
  • 1 1/2 cups heavy cream (or coconut cream for dairy-free)
  • 1/4 cup freshly grated parmesan cheese (or nutritional yeast for dairy-free)

Instructions

  1. Season chicken breasts with Italian seasoning, salt, and pepper.
  2. Heat 2 tbsp olive oil in a skillet over medium heat. Sear chicken 3–4 minutes per side until golden. Remove and set aside.
  3. Add remaining oil to the skillet. Sauté onion for 2–3 minutes until softened.
  4. Add garlic and sun-dried tomatoes. Cook for 1 minute until fragrant.
  5. Add spinach and cook until wilted, about 1 minute.
  6. Pour in heavy cream and stir in parmesan. Simmer for 2–3 minutes.
  7. Return chicken to the skillet. Simmer for 5 minutes until heated through.
  8. Remove from heat and let sauce thicken slightly before serving.

Notes

  • Use chicken thighs for a juicier, richer flavor.
  • Replace cream with Greek yogurt for a lighter version.
  • Add mushrooms, zucchini, or bell peppers for more vegetables.
  • A splash of white wine in the sauce adds extra depth.
  • Reheat gently with a splash of cream or broth if needed.
