Ingredients
- 3 tablespoons butter
- 2 lb Russet potatoes (about 4 medium), peeled and sliced 1/8‑inch thick
- 1 large yellow or white onion, thinly sliced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh chives, chopped (optional)
- 2½ cups grated Swiss or Gruyère cheese (about 8 oz)
- ½ cup grated Parmesan cheese (about 2 oz)
- 2½ to 3 cups half‑and‑half (half milk, half cream)
- Salt and pepper, to taste
Instructions
- Preheat oven to 350 °F and butter a large casserole dish using 1½ tablespoons of butter.
- Layer one third of the sliced potatoes in the dish and season with salt and pepper.
- Add half the sliced onions, ½ cup Swiss or Gruyère cheese, half the parsley and chives, and a sprinkle of Parmesan cheese.
- Repeat with another third of potatoes, the remaining onions, cheese, herbs, and more Parmesan.
- Top with the final third of the potatoes and pour the half‑and‑half evenly over the layers. Dot the top with the remaining 1½ tablespoons of butter.
- Cover the casserole with foil and bake for 1 hour at 350 °F.
- Uncover, sprinkle the remaining Swiss/Gruyère and Parmesan cheeses over the top, and bake for an additional 30–40 minutes until tender and golden.
- Remove from oven and let rest for a few minutes before serving to allow it to set.
