Description

A lush and comforting dish featuring thinly sliced potatoes baked in a creamy cheese sauce with onions, chives, and parsley. The top becomes golden and bubbling, while the interior turns tender and rich.


Ingredients

  • 3 tablespoons butter
  • 2 lb Russet potatoes (about 4 medium), peeled and sliced 1/8‑inch thick
  • 1 large yellow or white onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped (optional)
  • 2½ cups grated Swiss or Gruyère cheese (about 8 oz)
  • ½ cup grated Parmesan cheese (about 2 oz)
  • to 3 cups half‑and‑half (half milk, half cream)
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350 °F and butter a large casserole dish using 1½ tablespoons of butter.
  2. Layer one third of the sliced potatoes in the dish and season with salt and pepper.
  3. Add half the sliced onions, ½ cup Swiss or Gruyère cheese, half the parsley and chives, and a sprinkle of Parmesan cheese.
  4. Repeat with another third of potatoes, the remaining onions, cheese, herbs, and more Parmesan.
  5. Top with the final third of the potatoes and pour the half‑and‑half evenly over the layers. Dot the top with the remaining 1½ tablespoons of butter.
  6. Cover the casserole with foil and bake for 1 hour at 350 °F.
  7. Uncover, sprinkle the remaining Swiss/Gruyère and Parmesan cheeses over the top, and bake for an additional 30–40 minutes until tender and golden.
  8. Remove from oven and let rest for a few minutes before serving to allow it to set.

  • Add cooked vegetables like spinach or mushrooms between layers for extra flavor.
  • Use other cheeses such as cheddar or fontina for variety.
  • Add minced garlic between layers for a richer aroma.
