Ingredients
- For the shrimp:

- For the creamy garlic Parmesan sauce:

Instructions
- Make the mashed potatoes: Place peeled and cubed potatoes in a large pot, cover with cold salted water, and bring to a boil. Reduce to a simmer and cook for about 15 minutes, or until fork-tender. Drain and return to the pot. Add warm milk and butter, then mash until smooth. Season with salt, cover, and keep warm.
- Cook the shrimp: In a bowl, toss shrimp with olive oil, paprika, garlic powder, salt, and black pepper. Heat a large skillet over medium-high heat. Add shrimp and cook for 2–3 minutes per side, just until pink and opaque. Remove and set aside.
- Make the sauce: Reduce skillet heat to medium-low. Add butter and minced garlic. Cook for 1 minute until fragrant. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan and Dijon mustard (if using). Season with salt and pepper. Simmer 3–5 minutes until slightly thickened.
- Finish the dish: Return cooked shrimp to the skillet and toss to coat in the sauce. Remove from heat.
- Serve: Spoon mashed potatoes onto plates, top with creamy garlic shrimp and sauce, and garnish with fresh thyme leaves.
