Ingredients

  • 12 ounces penne pasta, cooked to al dente
  • 2 tablespoons olive oil
  • 1 1/2 pounds boneless, skinless chicken breast, cut into small pieces
  • 56 cloves garlic, minced
  • 4 tablespoons all-purpose flour
  • 3 tablespoons butter
  • 1 1/4 cups milk (any percentage)
  • 1 cup chicken broth (low sodium preferred)
  • 1 teaspoon Italian seasoning
  • 1 cup Parmesan cheese, divided
  • 1/4 cup fresh parsley, chopped (plus extra for garnish)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted water according to package directions until al dente. Drain and set aside.
  2. In a large, deep skillet, heat the olive oil over medium heat. Add the chicken, season with salt and pepper, and cook for about 5 minutes or until no longer pink. Remove the chicken from the pan and set aside.
  3. Add butter to the same skillet. Once melted, stir in the minced garlic and cook for 1 minute until fragrant.
  4. Sprinkle in the flour and Italian seasoning, whisking constantly for about 1 minute until lightly golden.
  5. Gradually whisk in the milk and chicken broth. Continue to cook, whisking, until the sauce thickens and becomes smooth.
  6. Remove from heat and stir in half of the Parmesan cheese until melted.
  7. Return the cooked chicken and pasta to the skillet, tossing everything together until evenly coated in the sauce.
  8. Stir in the remaining Parmesan and chopped parsley. Adjust seasoning with salt and pepper if needed.
  9. Serve immediately, garnished with extra Parmesan and parsley.
