Description

This creamy fire roasted tomato basil soup is rich, comforting, and full of smoky, savory flavor from fire-roasted tomatoes, garlic, onions, and fresh basil. Finished with a splash of cream, it’s the perfect cozy meal for any season and comes together in under an hour.


Ingredients

  • 2 cans (14.5 ounces each) fire-roasted tomatoes, with juices
  • 1 red bell pepper, chopped
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 4 cups chicken broth
  • ½ cup heavy cream (more if desired)
  • 8 fresh basil leaves
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon Better Than Bouillon Roasted Chicken (optional)
  • Grated Parmesan cheese, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, and red bell pepper. Sauté for 3–5 minutes until softened and fragrant.
  2. Add the fire-roasted tomatoes with their juices and chicken broth. Stir to combine and bring to a gentle boil.
  3. Reduce heat and let simmer for 30–45 minutes, stirring occasionally.
  4. Add basil leaves, then remove pot from heat. Blend soup using an immersion blender until smooth. (Alternatively, blend in batches using a countertop blender.)
  5. Return soup to heat and stir in the heavy cream. Season with salt and pepper to taste. If using, stir in Better Than Bouillon for added depth.
  6. Serve hot, garnished with Parmesan cheese and extra basil if desired.
