Description

This ultra-moist coconut poke cake is soaked in a rich cream of coconut and sweetened condensed milk mixture, topped with whipped topping and a snowy layer of coconut. A chilled, creamy dessert perfect for make-ahead entertaining.


Ingredients

  • 1 box (16 oz) white cake mix
  • 3 large eggs
  • 1 cup (240 ml) water
  • 1/3 cup (80 ml) neutral oil (vegetable or sunflower)
  • 1 can (14 oz / 396 g) cream of coconut
  • 1 can (14 oz / 396 g) sweetened condensed milk
  • 1 tub (16 oz / 454 g) frozen whipped topping, thawed
  • 1 package (10 oz / 283 g) flaked coconut (sweetened or unsweetened)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, combine cake mix, eggs, water, and oil. Mix until smooth, about 2 minutes.
  3. Pour into prepared pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  4. Let the cake cool completely in the pan, about 1 hour.
  5. In a bowl, whisk together cream of coconut and sweetened condensed milk until smooth.
  6. Using a straw or spoon handle, poke holes evenly across the cake surface.
  7. Slowly pour the coconut mixture over the cake, letting it soak in. Let it rest 10 minutes.
  8. Spread the thawed whipped topping evenly over the cake.
  9. Sprinkle flaked coconut over the top.
  10. Cover and refrigerate for at least 4 hours, or overnight, before slicing and serving.
