Description

Ingredients

1 tablespoon butter (for sautéing)

1/4 cup unsalted butter

1 small yellow onion, finely chopped

1/4 cup all-purpose flour

2 cups chicken broth (or vegetable broth for vegetarian)

2 cups half and half (or whole milk)

3 cups fresh broccoli, roughly chopped

1 cup carrots, peeled and chopped

1/2 teaspoon kosher salt

1/4 teaspoon paprika

1/4 teaspoon garlic powder

1/2 teaspoon dry mustard (or 1/2 tsp regular mustard)

1/4 teaspoon black pepper

2 cups shredded sharp cheddar cheese


Instructions

  1. Heat 1 tablespoon butter in a large Dutch oven over medium heat. Add onion and sauté until soft, about 2–3 minutes.
  2. Add remaining 1/4 cup butter and melt. Whisk in flour and cook for 1 minute, stirring frequently to form a roux.
  3. Slowly whisk in chicken broth, then half and half, ensuring a smooth mixture. Simmer for 1–2 minutes.
  4. Add broccoli, carrots, salt, paprika, garlic powder, mustard, and pepper. Reduce heat and simmer for 10–15 minutes until veggies are tender.
  5. Blend soup to desired consistency using an immersion or traditional blender (optional).
  6. Off heat, gradually stir in cheddar cheese in small batches until fully melted.
  7. Taste and adjust seasoning if needed. Serve hot with extra cheddar or black pepper if desired.
