Ingredients

  • 1 pound beef sirloin, thinly sliced
  • 12 ounces egg noodles
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1/4 cup all-purpose flour
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1 cup grated Parmesan cheese, divided
  • 1/2 cup grated mozzarella cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook egg noodles in salted water until just al dente. Drain and set aside.
  3. Heat olive oil in a skillet over medium-high heat. Cook beef until browned. Remove and set aside.
  4. In the same skillet, melt butter. Add onion and cook until translucent, then stir in garlic for 30 seconds.
  5. Add mushrooms and cook for 5 minutes until browned and moisture is released.
  6. Sprinkle in flour and stir for 1 minute. Gradually add beef broth, stirring to thicken.
  7. Reduce heat and stir in heavy cream, sour cream, and half the Parmesan. Season with salt and pepper.
  8. Return beef to the skillet and simmer for 2–3 minutes.
  9. Combine cooked noodles with the beef sauce in a large bowl. Transfer to baking dish.
  10. Top with remaining Parmesan and mozzarella cheese.
  11. Bake uncovered for 25–30 minutes until bubbly and golden. Garnish with fresh parsley before serving.
