Ingredients
- Chicken and seasoning:
- 2 large boneless, skinless chicken breasts
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- ½ tsp paprika
- Roasted onions:
- 2 medium yellow onions, sliced into thick wedges
- 1 tbsp olive oil
- ¼ tsp salt
- Sauce:
- 1 tbsp olive oil
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, drained and sliced
- ½ cup chicken broth
- ¼ cup balsamic vinegar
- ¾ cup heavy cream
- ½ tsp dried Italian seasoning
- Optional garnish:
- Fresh parsley, finely chopped
Instructions
- Preheat the oven to 200°C (400°F).
- Place onion wedges on a baking tray, drizzle with 1 tbsp olive oil, sprinkle with ¼ tsp salt, toss to coat, and roast for 20–25 minutes until soft and caramelized.
- Season chicken breasts with salt, black pepper, garlic powder, and paprika on both sides.
- Heat 1 tbsp olive oil in a large skillet over medium heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
- Reduce heat to medium-low and add garlic to the same skillet. Sauté for 30 seconds until fragrant.
- Add sun-dried tomatoes, chicken broth, and balsamic vinegar. Simmer for 3–4 minutes to reduce slightly.
- Stir in heavy cream and Italian seasoning. Simmer gently for 5 minutes until thickened.
- Return chicken and roasted onions to the skillet. Spoon sauce over and simmer for another 3–4 minutes.
- Garnish with chopped parsley if desired and serve warm.
