Description

This creamy apple and pear salad combines crisp fruit, crunchy nuts, sweet grapes, and a tangy, lightly sweetened dressing for a refreshing and satisfying side dish or light lunch.


Ingredients

  • 1/4 cup homemade mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons raw honey or maple syrup
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon crushed chili flakes (optional)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 2 medium Pink Lady apples
  • 1 medium green apple
  • 2 Comice or Seckel pears
  • 1 cup seedless red grapes
  • 4 ribs celery
  • 1/2 cup dried cranberries
  • 1/3 cup raw pecans
  • 1/4 cup blue cheese, crumbled

Instructions

  1. In a medium bowl, whisk together the mayonnaise, Greek yogurt, honey or maple syrup, lemon juice, lemon zest, apple cider vinegar, chili flakes, salt, and pepper until smooth. Chill the dressing while preparing the salad.
  2. Core and dice the apples and pears into 1/2-inch cubes. Halve the grapes. Finely chop the celery, dried cranberries, and pecans.
  3. In a large bowl, combine the apples, pears, grapes, celery, cranberries, and pecans. Pour the dressing over the mixture and toss gently to coat.
  4. Add the crumbled blue cheese and toss lightly again.
  5. Refrigerate for 20 minutes before serving to allow flavors to meld.

Notes

  • Substitute blue cheese with feta for a milder taste.
  • Use walnuts or almonds instead of pecans if desired.
  • Chili flakes are optional and can be omitted for a kid-friendly version.
  • To make dairy-free, use a plant-based yogurt and omit the cheese or use a vegan alternative.
