Description

Ingredients

  • 1 cup (224 g) unsalted butter, room temperature
  • 6 oz (170 g) full-fat cream cheese, room temperature
  • 1 1/2 cups (300 g) granulated sugar
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cream of tartar
  • 3 1/2 cups (450 g) all-purpose flour, plus more for dusting
  • 1/2 cup (112 g) unsalted butter, room temperature (for frosting)
  • 2 oz (56 g) full-fat cream cheese, room temperature (for frosting)
  • 2 cups (220 g) powdered sugar, spooned and leveled
  • 1 teaspoon vanilla extract (for frosting)
  • Gel food coloring, optional
  • Sprinkles, for decorating

Instructions

  1. In a large mixing bowl, beat butter, cream cheese, and granulated sugar on medium speed until light and fluffy, about 1 minute. Scrape down the bowl.
  2. Add egg, egg yolk, and vanilla extract. Mix until smooth and combined.
  3. Mix in salt, baking powder, and cream of tartar until incorporated.
  4. Gradually add flour. When the dough becomes thick and sticky, finish mixing with a spatula until fully combined.
  5. Turn dough onto floured plastic wrap, shape into a 1-inch-thick rectangle, wrap tightly, and refrigerate for at least 1 hour or overnight.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out dough on a floured surface to 1/4 inch thickness. Cut into shapes and place on baking sheets about 1 inch apart. Keep unbaked dough chilled.
  8. Bake for 8–10 minutes until tops are set and pale. Cool on the sheet for 1 minute, then transfer to a wire rack to cool completely.
  9. To make frosting: beat butter and cream cheese until smooth. Gradually add powdered sugar, then vanilla. Add food coloring if using.
  10. Frost cooled cookies and decorate with sprinkles before the frosting sets. Let frosting firm before stacking.
