Description

Ingredients

  • 1 cup unsalted butter, softened (226 g)
  • 3/4 cup powdered sugar (90 g)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour (250 g)
  • 1/4 teaspoon salt
  • 3/4 cup dried cranberries, chopped if large (110 g)
  • 1/2 cup shelled pistachios, roughly chopped (60 g)

Instructions

  1. In a large bowl, cream the softened butter and powdered sugar until smooth and light using a spatula or hand mixer.
  2. Add the vanilla extract and mix until fully incorporated.
  3. In a separate bowl, whisk together the flour and salt. Gradually add this to the butter mixture, mixing just until a soft dough forms.
  4. Fold in the dried cranberries and chopped pistachios until evenly distributed.
  5. Divide the dough in half and shape each half into a log about 2 inches in diameter. Wrap in parchment paper or plastic wrap.
  6. Refrigerate the logs for at least 1 hour or until firm enough to slice cleanly.
  7. Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
  8. Slice the chilled dough into 1/4-inch rounds and place on the baking sheet with slight spacing.
  9. Bake for 12 to 15 minutes, or until edges are set and bottoms are lightly golden.
  10. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
