Description

This Cracker Barrel-inspired Broccoli Cheddar Chicken is a cozy, cheesy casserole featuring tender chicken breasts, fresh broccoli, creamy soup, and a buttery Ritz cracker topping. Baked until golden and bubbly, it’s an easy weeknight dinner the whole family will love.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 cups fresh broccoli florets
  • 1 can (10.75 oz) cream of chicken soup
  • 1/2 cup milk
  • 1/2 teaspoon paprika
  • 1 cup crushed Ritz crackers
  • 1 cup shredded sharp cheddar cheese
  • Butter or cooking spray for greasing the baking dish

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Season both sides of chicken breasts with salt and pepper. Arrange them in the prepared dish.
  3. In a bowl, mix cream of chicken soup, milk, and paprika until smooth.
  4. Distribute broccoli florets evenly around and over the chicken.
  5. Pour soup mixture over the chicken and broccoli, spreading to cover evenly.
  6. Sprinkle crushed Ritz crackers evenly on top.
  7. Top with shredded cheddar cheese.
  8. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15–20 minutes, or until the chicken is cooked through and the topping is golden and bubbly.
  9. Let rest for 5 minutes before serving.

Notes

  • Use an instant-read thermometer to ensure chicken reaches 165°F (74°C).
  • For extra crunch, add the cracker topping during the last 30 minutes of baking.
  • To lighten the dish, use reduced-fat soup and cheese, and low-fat milk.
