This Cracker Barrel-inspired Broccoli Cheddar Chicken is a cozy, cheesy casserole featuring tender chicken breasts, fresh broccoli, creamy soup, and a buttery Ritz cracker topping. Baked until golden and bubbly, it’s an easy weeknight dinner the whole family will love.
Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 cups fresh broccoli florets
- 1 can (10.75 oz) cream of chicken soup
- 1/2 cup milk
- 1/2 teaspoon paprika
- 1 cup crushed Ritz crackers
- 1 cup shredded sharp cheddar cheese
- Butter or cooking spray for greasing the baking dish
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Season both sides of chicken breasts with salt and pepper. Arrange them in the prepared dish.
- In a bowl, mix cream of chicken soup, milk, and paprika until smooth.
- Distribute broccoli florets evenly around and over the chicken.
- Pour soup mixture over the chicken and broccoli, spreading to cover evenly.
- Sprinkle crushed Ritz crackers evenly on top.
- Top with shredded cheddar cheese.
- Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15–20 minutes, or until the chicken is cooked through and the topping is golden and bubbly.
- Let rest for 5 minutes before serving.
Notes
- Use an instant-read thermometer to ensure chicken reaches 165°F (74°C).
- For extra crunch, add the cracker topping during the last 30 minutes of baking.
- To lighten the dish, use reduced-fat soup and cheese, and low-fat milk.
