Description

This crustless cottage cheese spinach quiche is a protein-packed, gluten-free breakfast made with eggs, cottage cheese, spinach, and cheddar. It’s easy to prep, perfect for meal prep, and endlessly customizable for a nourishing start to your day.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely diced (about 100 g)
  • 2 cups fresh spinach, roughly chopped (about 60 g)
  • 1 cup cottage cheese (240 g, full-fat or low-fat)
  • 6 large eggs
  • 1/2 cup milk (120 ml)
  • 1/2 cup shredded cheddar cheese (60 g)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1 tablespoon chopped fresh parsley or chives (optional)

Instructions

  1. Preheat oven to 180°C (350°F). Lightly grease a 9-inch (23 cm) pie dish or baking dish.
  2. Heat olive oil in a skillet over medium heat. Sauté onion for 3–4 minutes until soft and translucent.
  3. Add spinach and cook for 1–2 minutes until wilted. Remove from heat and let cool slightly.
  4. In a large bowl, whisk together eggs, milk, cottage cheese, salt, pepper, garlic powder, and paprika until well combined.
  5. Stir in the cooked onion-spinach mixture, shredded cheddar, and herbs if using.
  6. Pour the mixture into the prepared dish and spread evenly.
  7. Bake for 35–40 minutes until the center is set and top is lightly golden.
  8. Let rest 5–10 minutes before slicing. Serve warm or store for later.

Notes

  • Use low-fat or full-fat cottage cheese based on dietary needs.
  • Frozen spinach can be used if thawed and drained well.
  • For added flavor, try feta, mozzarella, or different herbs.
