Description
This crustless cottage cheese spinach quiche is a protein-packed, gluten-free breakfast made with eggs, cottage cheese, spinach, and cheddar. It’s easy to prep, perfect for meal prep, and endlessly customizable for a nourishing start to your day.
Ingredients
- 1 tablespoon olive oil
- 1 small onion, finely diced (about 100 g)
- 2 cups fresh spinach, roughly chopped (about 60 g)
- 1 cup cottage cheese (240 g, full-fat or low-fat)
- 6 large eggs
- 1/2 cup milk (120 ml)
- 1/2 cup shredded cheddar cheese (60 g)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1 tablespoon chopped fresh parsley or chives (optional)
Instructions
- Preheat oven to 180°C (350°F). Lightly grease a 9-inch (23 cm) pie dish or baking dish.
- Heat olive oil in a skillet over medium heat. Sauté onion for 3–4 minutes until soft and translucent.
- Add spinach and cook for 1–2 minutes until wilted. Remove from heat and let cool slightly.
- In a large bowl, whisk together eggs, milk, cottage cheese, salt, pepper, garlic powder, and paprika until well combined.
- Stir in the cooked onion-spinach mixture, shredded cheddar, and herbs if using.
- Pour the mixture into the prepared dish and spread evenly.
- Bake for 35–40 minutes until the center is set and top is lightly golden.
- Let rest 5–10 minutes before slicing. Serve warm or store for later.
Notes
- Use low-fat or full-fat cottage cheese based on dietary needs.
- Frozen spinach can be used if thawed and drained well.
- For added flavor, try feta, mozzarella, or different herbs.
- Make it dairy-free with plant-based milk and cheese.
