Description

These cottage cheese pepperoni mini pizzas are a high-protein, low-carb alternative to traditional pizza. Baked until golden and bubbly, they deliver cheesy, savory flavor in a quick and satisfying bite-sized form.

Ingredients

  • 1 cup cottage cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 cup sliced pepperoni
  • 1/4 cup pizza sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine cottage cheese, mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and black pepper. Mix until well blended.
  3. Scoop small portions onto the prepared baking sheet and flatten into small rounds, spacing them apart.
  4. Top each round with a slice of pepperoni and a small spoonful of pizza sauce.
  5. Bake for 12–15 minutes until cheese is bubbly and edges are golden brown.
  6. Remove from oven and cool slightly before serving.

Notes

  • Drain excess liquid from cottage cheese for better structure.
  • Use thick, low-sugar pizza sauce to keep carbs lower.
  • Store refrigerated for up to 3 days in an airtight container.
  • Freeze for up to 1 month and reheat directly from frozen.
  • Reheat in oven or air fryer for best texture.
  • Customize with vegetables, turkey pepperoni, or pesto.
