Ingredients
- 2 cups (450 g) full-fat cottage cheese
- 2 large eggs
- 1/3 cup (65 g) granulated sugar
- 1 teaspoon pure vanilla extract
- 1/2 cup (120 ml) whole milk
- 1/2 cup (60 g) all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup (150 g) fresh blueberries
- 1 tablespoon cornstarch
- 1 tablespoon lemon zest (optional)
- 1 tablespoon melted unsalted butter (for greasing)
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish with melted butter.
- Whisk cottage cheese, eggs, sugar, vanilla, and milk until mostly smooth.
- In a separate bowl, combine flour, baking powder, and salt.
- Gradually stir dry ingredients into wet mixture until incorporated.
- Toss blueberries with cornstarch.
- Fold blueberries and lemon zest into batter gently.
- Pour batter into prepared dish and spread evenly.
- Bake 40–45 minutes until center is set and top lightly golden.
- Cool at least 15 minutes before slicing and serving.
Notes
- Tossing blueberries in cornstarch prevents sinking.
- Blend cottage cheese for a smoother texture if desired.
