These Cosmic Brownie Cookies are a Crumbl Cookie copycat featuring fudgy brownie-based cookies topped with smooth chocolate ganache and colorful candy-coated sprinkles for a nostalgic and indulgent treat.
Ingredients
- 1 box brownie mix (18–19 oz)
- 1/4 cup all-purpose flour
- 2 large eggs
- 1/4 cup vegetable oil
- 2 tbsp water
- 1 tsp vanilla extract
- 1 cup semisweet chocolate chips
- 1/2 cup heavy cream
- Rainbow candy-coated cosmic sprinkles
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, mix brownie mix, flour, eggs, oil, water, and vanilla extract until a thick dough forms.
- Scoop about 2 tablespoons of dough per cookie and place on the prepared baking sheet, spacing 2 inches apart.
- Bake for 10–12 minutes until edges are set and centers are slightly soft. Let cool completely.
- To make the ganache, heat heavy cream in the microwave for 45 seconds to 1 minute until hot.
- Pour hot cream over chocolate chips and let sit for 1 minute. Stir until smooth and glossy.
- Let ganache cool slightly until thick but spreadable.
- Spread ganache over each cooled cookie and immediately top with cosmic sprinkles.
Notes
- Use full-fat coconut milk as a substitute for heavy cream if needed.
- Chill dough briefly if it’s too sticky to handle.
- Store ganache in the fridge for up to 3 days; reheat gently before using.
- For gluten-free cookies, use gluten-free brownie mix and flour substitute.
- Freeze cookies without ganache for longer storage.
