Description

These Cosmic Brownie Cookies are a Crumbl Cookie copycat featuring fudgy brownie-based cookies topped with smooth chocolate ganache and colorful candy-coated sprinkles for a nostalgic and indulgent treat.


Ingredients

  • 1 box brownie mix (1819 oz)
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 2 tbsp water
  • 1 tsp vanilla extract
  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy cream
  • Rainbow candy-coated cosmic sprinkles

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, mix brownie mix, flour, eggs, oil, water, and vanilla extract until a thick dough forms.
  3. Scoop about 2 tablespoons of dough per cookie and place on the prepared baking sheet, spacing 2 inches apart.
  4. Bake for 10–12 minutes until edges are set and centers are slightly soft. Let cool completely.
  5. To make the ganache, heat heavy cream in the microwave for 45 seconds to 1 minute until hot.
  6. Pour hot cream over chocolate chips and let sit for 1 minute. Stir until smooth and glossy.
  7. Let ganache cool slightly until thick but spreadable.
  8. Spread ganache over each cooled cookie and immediately top with cosmic sprinkles.

Notes

  • Use full-fat coconut milk as a substitute for heavy cream if needed.
  • Chill dough briefly if it’s too sticky to handle.
  • Store ganache in the fridge for up to 3 days; reheat gently before using.
  • For gluten-free cookies, use gluten-free brownie mix and flour substitute.
