Description
Tender cod fillets are pan-fried and topped with a rich garlic herb butter made from fresh herbs, creating a quick and elegant seafood dish that’s perfect for weeknights or entertaining guests.
Ingredients
- 6 tablespoons unsalted butter, softened
- 1 1/2 teaspoons garlic, finely minced
- 1 teaspoon fresh parsley, finely chopped
- 1 teaspoon fresh thyme leaves
- 2 teaspoons fresh basil, finely chopped
- 1/4 teaspoon sea salt
- 2 tablespoons extra virgin olive oil
- 6 Atlantic cod fillets (4 ounces each)
- Sea salt, to taste
- Black pepper, to taste
- 1 tablespoon fresh parsley, finely chopped (for garnish)
Instructions
- In a bowl, mix softened butter with garlic, parsley, thyme, basil, and salt until well combined.
- Shape the butter into a log using plastic wrap and refrigerate for 15–20 minutes until firm.
- Heat olive oil in a large skillet over medium-high heat.
- Pat cod fillets dry and season both sides with salt and pepper.
- Add cod to the hot skillet and cook for 2–3 minutes until golden on the bottom.
- Reduce heat to medium, flip fillets, and place a slice of herb butter on each fillet.
- Cook for another 3–4 minutes, basting with melted butter.
- Transfer fish to plates, drizzle with remaining butter from the pan, and garnish with parsley. Serve immediately.
Notes
- Add 1 tsp lemon zest to the butter for a citrus twist.
- Use dried herbs if fresh aren’t available (use half the amount).
- Lightly flour the fish before pan-frying for a crisper texture.
- This recipe also works well with haddock or pollock.
