Description

Ingredients

  • 16 oz full-fat cream cheese, softened
  • 3/4 cup powdered sugar
  • 2/3 cup sweetened coconut flakes, plus extra for coating
  • 1 teaspoon coconut extract (optional)
  • 1 whole almond (for the nose)
  • 9 to 10 chocolate chips (for eyes, smile, and buttons)
  • 1 piece candy rope or gummy tape (halal-friendly, for the scarf)
  • Optional dippers: graham crackers, animal crackers, vanilla wafers, shortbread cookies

Instructions

  1. In a large bowl, beat softened cream cheese, powdered sugar, and coconut extract (if using) until smooth.
  2. Mix in 2/3 cup sweetened coconut flakes until combined.
  3. Divide mixture into two portions: two-thirds for the body, one-third for the head.
  4. Roughly shape each portion into a ball, cover, and refrigerate for 1 hour to firm up.
  5. Roll each portion into a smooth ball using your hands, then coat in extra coconut flakes.
  6. Place the larger ball on a serving platter, then gently place the smaller one on top.
  7. Decorate with chocolate chips for eyes, smile, and buttons. Add the almond for a nose.
  8. Wrap the candy rope or gummy tape around the “neck” as a scarf.
  9. Serve immediately or refrigerate until ready to serve with your favorite dippers.
