Description

This coconut mango pudding is a creamy, tropical dessert combining rich coconut milk with sweet mango for a smooth and refreshing treat. It’s easy to prepare and perfect served chilled.


Ingredients

  • 2 cups ripe mango, peeled and diced
  • 1 can (400 ml) full-fat coconut milk
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/2 cup diced fresh mango (optional garnish)
  • 2 tablespoons toasted shredded coconut (optional garnish)
  • 6 mint leaves (optional garnish)

Instructions

  1. Blend the diced mango until completely smooth to make a puree and set aside.
  2. In a saucepan, whisk together sugar, cornstarch, and salt.
  3. Gradually whisk in the whole milk, then add the coconut milk and mix until smooth.
  4. Cook over medium heat, whisking constantly, until the mixture thickens and coats the back of a spoon (about 6–8 minutes).
  5. Remove from heat and stir in vanilla extract, lemon juice, and mango puree until well combined.
  6. Return to low heat and cook for 1–2 minutes, stirring gently, without boiling.
  7. Pour the pudding into serving glasses or ramekins.
  8. Let cool at room temperature for 15–20 minutes, then cover and refrigerate for about 3 hours until set.
  9. Garnish with diced mango, toasted coconut, and mint before serving if desired.

Notes

  • Use ripe mangoes for the best natural sweetness and flavor.
  • Whisk constantly to prevent lumps during cooking.
  • For a dairy-free version, replace whole milk with more coconut milk.
  • Add lime zest for a brighter, citrusy flavor.
  • Do not boil after adding mango to maintain a smooth texture.
  • Store in the refrigerator for up to 3 days and serve chilled.
