Description

These Coconut Lime Chicken Tacos combine tender, marinated chicken with fresh toppings and tropical flavors from coconut milk and lime—perfect for a quick, vibrant weeknight meal.


Ingredients

  • 1 lb (450 g) boneless, skinless chicken breasts or thighs, cut into strips
  • 1/4 cup coconut milk
  • Juice of 2 limes
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 8 small tortillas (corn or flour)
  • Toppings: shredded cabbage, diced tomatoes, sliced avocado, fresh cilantro, lime wedges

Instructions

  1. In a bowl, whisk together coconut milk, lime juice, olive oil, garlic, chili powder, cumin, salt, and pepper. Add chicken and toss to coat. Marinate for 20 minutes to 2 hours.
  2. Heat a large skillet over medium-high heat. Add chicken and cook for 5–7 minutes until golden and cooked through.
  3. Warm tortillas in a dry skillet for 30 seconds per side or in a 350°F (175°C) oven for 5–10 minutes wrapped in foil.
  4. Assemble tacos by filling each tortilla with chicken and desired toppings (cabbage, tomatoes, avocado, cilantro, lime juice).
  5. Serve immediately while warm and enjoy.
