Ingredients
- 1 cup pitted Medjool dates (about 10–15 dates)
- ½ cup raw nuts (such as walnuts or pecans)
- ¼ cup protein powder or adaptogen blend (optional)
- ¼ cup desiccated (shredded) coconut, plus more for rolling
- ½ teaspoon sea salt
Instructions
- Add dates, nuts, protein powder (if using), ¼ cup shredded coconut, and salt to a food processor.
- Blend until the mixture comes together in a sticky dough, scraping sides as needed.
- Scoop and roll into bite-sized balls, about 1 to 1½ tablespoons each.
- Roll each ball in additional shredded coconut if desired.
- Place in an airtight container and refrigerate to firm up, or enjoy immediately.
Notes
- Soak firmer dates (like Deglet Noor) in warm water for 10 minutes before using.
- If too dry, add a splash of water or extra date; if too wet, add more coconut or nuts.
- Substitute coconut coating with chia seeds, cocoa powder, or chopped nuts.
