Description

These Coconut Bliss Balls with Dates are chewy, naturally sweet no-bake treats made with just a few wholesome ingredients. Perfect for a quick snack, dessert, or pre/post-workout bite, they’re easy to make and full of flavor.


Ingredients

  • 1 cup pitted Medjool dates (about 1015 dates)
  • ½ cup raw nuts (such as walnuts or pecans)
  • ¼ cup protein powder or adaptogen blend (optional)
  • ¼ cup desiccated (shredded) coconut, plus more for rolling
  • ½ teaspoon sea salt

Instructions

  1. Add dates, nuts, protein powder (if using), ¼ cup shredded coconut, and salt to a food processor.
  2. Blend until the mixture comes together in a sticky dough, scraping sides as needed.
  3. Scoop and roll into bite-sized balls, about 1 to 1½ tablespoons each.
  4. Roll each ball in additional shredded coconut if desired.
  5. Place in an airtight container and refrigerate to firm up, or enjoy immediately.

Notes

  • Soak firmer dates (like Deglet Noor) in warm water for 10 minutes before using.
  • If too dry, add a splash of water or extra date; if too wet, add more coconut or nuts.
