Description

Coconut Berry Cloud is a creamy, protein-rich cottage cheese whip blended with full-fat coconut milk and naturally sweet berries. It’s a quick, refreshing, and satisfying snack or light dessert that’s low in carbs and easily customizable.


Ingredients

  • 1/3 cup full-fat canned coconut milk, well shaken or stirred
  • 1/2 cup cottage cheese (2% or preferred variety)
  • 1/4 cup fresh or frozen berries (raspberries, blueberries, or mixed berries)
  • 1/2 teaspoon xylitol (optional)
  • 3 packets stevia (adjust to taste)
  • 1 splash vanilla extract

Instructions

  1. Add all ingredients to a mixing bowl, blender, or food processor.
  2. Blend or process until completely smooth, thick, and creamy.
  3. Spoon into a bowl and garnish, if desired, with a berry or a sprinkle of shaved dark chocolate, cocoa powder, or cinnamon.
