Description
Cleansing Turmeric Vegetable Soup is a nourishing, brothy, and anti-inflammatory dish made with turmeric, ginger, and fiber-rich vegetables. Light yet satisfying, it’s ideal for digestion support and restoring balance after indulgent meals.
Ingredients
- 1 tablespoon ghee or coconut oil
- 1 large onion, diced
- 1 medium carrot, diced
- 2 stalks celery, diced
- 1 tablespoon fresh grated turmeric root or 1 teaspoon ground turmeric
- 2 teaspoons garlic, minced (3–4 cloves)
- 1 tablespoon fresh ginger, minced or ½ teaspoon ground ginger
- 6 cups turkey broth, chicken broth, vegetable broth, or water
- 1 teaspoon Celtic sea salt
- ½ teaspoon black pepper
- 2 cups cauliflower florets (cut small)
- ½ of a 15-ounce can white beans, drained and rinsed (optional)
- 2 cups kale, stems removed and chopped
- Chopped cilantro for garnish (optional)
Instructions
- Heat the ghee or coconut oil in a large soup pot over medium-low heat.
- Add the diced onion and cook for 5–7 minutes, until starting to brown.
- Add the carrot and celery; cook for another 3–5 minutes until softened.
- Stir in the turmeric, garlic, and ginger until vegetables are coated.
- Cook for 1 minute, until fragrant.
- Pour in the broth or water. Add sea salt and black pepper. Bring to a boil.
- Add cauliflower, cover, and reduce heat to simmer.
- Simmer for 10–15 minutes, until cauliflower is fork-tender.
- Stir in the white beans (if using) and kale. Cook for 2–3 minutes until kale wilts.
- Serve hot, garnished with chopped cilantro if desired.
Notes
- Use coconut oil instead of ghee for a vegan version.
- Spinach can replace kale for a gentler flavor.
- Add lemon juice just before serving for brightness.
- Include cayenne or red pepper flakes for heat.
- Use mashed cauliflower to naturally thicken the broth.
