Description

Ingredients

  • 4 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 1/4 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla essence (or essence of choice)
  • 2 cups milk
  • 1 cup vegetable oil

Instructions

  1. Preheat oven to 180°C (350°F). Lightly grease a muffin pan or line with paper liners.
  2. In a large bowl, beat sugar, eggs, and oil until well blended and creamy.
  3. Add milk and essence. Mix until fully combined.
  4. In a separate bowl, whisk flour and baking powder together.
  5. Gradually add the dry ingredients to the wet ingredients, mixing gently after each addition until the batter is smooth. Do not overmix.
  6. Divide the batter into the muffin cups, filling each about three-quarters full.
  7. Bake for 20–25 minutes, or until golden and a toothpick comes out clean.
  8. Cool slightly before serving.
