These Cinnamon Roll Cheesecake Bars blend creamy cheesecake with the warm, spiced flavor of cinnamon rolls. Featuring a cinnamon graham cracker crust, a vanilla-infused cheesecake layer, and a gooey brown sugar-cinnamon swirl, they make a rich, crowd-pleasing dessert.
Ingredients
- 2 cups cinnamon graham crackers, finely crushed
- 1/3 cup butter, melted
- 1/4 cup brown sugar
- 16 oz cream cheese, softened
- 2/3 cup sugar
- 2 eggs
- 1 tbsp vanilla extract
- 1/2 cup sour cream
- 1 cup brown sugar
- 1/4 cup all-purpose flour
- 2–3 tbsp ground cinnamon
- 6 tbsp butter
Instructions
- Preheat the oven to 325°F. Line an 8×8-inch pan with foil, leaving an overhang for easy removal, and lightly spray with cooking spray.
- In a medium bowl, mix crushed cinnamon graham crackers, melted butter, and brown sugar until combined. Press into the bottom of the prepared pan. Bake for 10–12 minutes until lightly golden. Keep the oven on.
- In a stand mixer, beat the cream cheese and sugar for about 1 minute until fluffy. Add eggs one at a time, mixing after each. Blend in vanilla extract and sour cream. Set aside.
- In a saucepan, melt together brown sugar, flour, cinnamon, and butter until smooth. Remove from heat.
- Spread half of the cheesecake batter over the baked crust. Drizzle or pipe half of the cinnamon mixture on top and swirl gently with a knife. Repeat with remaining cheesecake and cinnamon mixtures.
- Bake for 35–40 minutes or until edges are set and the center has a slight jiggle.
- Cool completely, then refrigerate for at least 2 hours before slicing and serving.
Notes
- For a nutty variation, add chopped walnuts or pecans to the cinnamon swirl.
- Chill thoroughly for clean slices—wipe your knife between cuts.
- Use full-fat cream cheese for best texture, though light versions can be substituted.
