Description

These Cinnamon Banana French Toast Sticks are a vegan twist on the breakfast classic, made with banana, flaxseed, and almond milk. They’re crispy on the outside, soft on the inside, and packed with warm cinnamon flavor — perfect for dipping in maple syrup.


Ingredients

  • 4 slices of bread (use gluten-free bread if preferred)
  • 1 cup dairy-free milk (almond milk recommended)
  • 1 tablespoon ground flaxseed
  • 1 medium banana, mashed
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon oil (canola spray oil or coconut oil, for pan)
  • 1/3 cup maple syrup (for serving)
  • 1/4 cup chopped walnuts (optional, for topping)

Instructions

  1. Cut the slices of bread into thick sticks and set aside.
  2. In a large bowl, whisk together mashed banana, almond milk, cinnamon, vanilla, and ground flaxseed until smooth.
  3. Refrigerate the mixture for 10 minutes to thicken.
  4. Whisk again, then dip each bread stick into the banana mixture, coating all sides.
  5. Heat a non-stick pan over medium heat and lightly grease with oil.
  6. Cook 3–4 coated sticks at a time for about 2 minutes per side until golden brown and crisp.
  7. Repeat with remaining sticks.
  8. Serve warm with maple syrup, walnuts, and extra banana slices if desired.

  • Use slightly stale bread for best texture and soak briefly to avoid sogginess.
  • Chia seeds can substitute flaxseed if needed, but allow extra thickening time.
